The Easiest Vegan Banana Pancake

Before I became vegan, I was already experimenting with different ingredients to create a vegan gluten free banana pancake. I already have one banana pancake recipe posted here, however, it's not vegan since it contains egg. I did not want to create a recipe that would require chia/flax egg as I am aware that not many people are willing to invest in chia seeds. Hence, this recipe contains the most simple and basic ingredients :) I'm sure many of you would already have these ingredients on hand. If you prefer your pancakes sweet, add stevia or any natural sweetener as my recipe contains no sugar. To me, serving it with fresh fruits is the best ;)

Vegan Gluten Free Banana Pancakes Makes about 4 - 5 pancakes

Ingredients: 1/2 cup all purpose gluten free flour (i use bob red mill's) 1/2 tsp baking powder 1 ripe banana cinnamon (as much as you like - i prefer to go crazy with this) splash of water

Directions: Mash banana with a fork and mix it together with the flour Add in rest of the ingredients Add water if necessary, but not too much. Batter should be of a thick consistency Pour about 2 tablespoons of the batter into the pan for 1 min or until golden brown before flipping over Serve with fresh fruits
