Acai Breakfast Bowl

Apart from Chia seeds, it is no surprise that acai is now one of the most popular Superfoods. I finally got onto the bandwagon and bought a packet of acai from navitas naturals! I get asked a lot about where I buy my Superfoods from... Well, I get them from trusty iherb! ;) For the past week, I have been obsessed with nana ice cream!! In case you aren't aware of what it is, it's basically banana ice cream made from mainly frozen bananas. A vegan and super healthy alternative to store bought ice creams.

All you need is 2 ingredients and you can go crazy with the toppings! For me, I prefer adding fruits or granola into my breakfast bowls.

Acai Nana Ice Cream Makes 1 bowl

Ingredients: 4 frozen bananas 1 tbs acai

Directions: Place frozen bananas into a food processor/blender Add in acai Blend together

See, super simple isn't it? Fuss free and easy to make. It's my go-to breakfast these days! You can also make an acai smoothie bowl using the same ingredients. But to make it more liquid-y, add in about 1 cup of coconut water!

The Easiest Vegan Banana Pancake

Before I became vegan, I was already experimenting with different ingredients to create a vegan gluten free banana pancake. I already have one banana pancake recipe posted here, however, it's not vegan since it contains egg. I did not want to create a recipe that would require chia/flax egg as I am aware that not many people are willing to invest in chia seeds. Hence, this recipe contains the most simple and basic ingredients :) I'm sure many of you would already have these ingredients on hand. If you prefer your pancakes sweet, add stevia or any natural sweetener as my recipe contains no sugar. To me, serving it with fresh fruits is the best ;)

Vegan Gluten Free Banana Pancakes Makes about 4 - 5 pancakes

Ingredients: 1/2 cup all purpose gluten free flour (i use bob red mill's) 1/2 tsp baking powder 1 ripe banana cinnamon (as much as you like - i prefer to go crazy with this) splash of water

Directions: Mash banana with a fork and mix it together with the flour Add in rest of the ingredients Add water if necessary, but not too much. Batter should be of a thick consistency Pour about 2 tablespoons of the batter into the pan for 1 min or until golden brown before flipping over Serve with fresh fruits

Green Smoothie Recipe

Happy New Years Everyone! Just in case you indulged a little too much over the festive season, here's a green smoothie recipe for you.

Not only do green smoothies give you energy throughout the day, it can also help you to detox and cleanse your system. With many health benefits, you will be amazed at how fast your skin gets cleared up. The past few weeks, I have been having green smoothies for breakfast, and it definitely helps to keep me full till lunch time. My skin also started clearing and I have lesser active breakouts.

I am sure you have come across plenty of infographics on Tumblr or Pinterest, that shows you the steps and ingredients needed to create a certain smoothie recipe. Follow them and you will never go wrong :) I like mixing up the ingredients for my recipes and creating different flavours. That's the best part about smoothies - you can throw in tons of ingredients and it'll still taste great ;)

Just so you know, avocados and bananas make a pretty good combination! I love the flavour of the two combined :) And without a doubt, my green smoothie recipe includes both of these fruits! Now, if you are not a fan of vegetables, don't worry, you wouldn't taste a hint of it! I got my friends hooked on green smoothies now ;)

If you do not have any access to baby spinach (weirdly enough, the supermarket doesn't seem to have any now), try switching it up with kale or romaine lettuce! Not a fan of coconut water? Use milk or plant based milk if you're vegan. I prefer using coconut water as it's more refreshing - perfect for a post workout drink/meal! If you want to add more flavour to your smoothie, add cinnamon :)

You see, there are just endless ways to create your very own green smoothie but this is my favourite. Let me know if you were to try it!

Basic Oatmeal Recipe

I admit, I am an oatmeal addict. I have oatmeal every single morning for breakfast. It's one of my 'go-to's that I simply adore. #1: It's easy to prepare #2: It keeps me full till lunch #3: I can have endless creations!

This is my Basic Oatmeal recipe, thus feel free to add your favourite toppings. My favourite is definitely avocado and banana. And of course, a big dollop of peanut butter (as seen in the video)

Basic Oatmeal Recipe Makes 1 serving

Ingredients: 3 Tbs Instant oats 1 Tbs Raw honey (Sub coconut sugar if vegan) 1/4 - 1/2 Cup HOT water (you may use less or more) 1 Tbs Chia seeds Splash of plant based milk/soy milk

Directions: 1. Place oats and honey into a bowl. Add in hot water and stir till the water has been absorbed 2. Pour in Chia seeds after the mixture has been cooled down slightly and stir again 3. Once the mixture has thickened up, add in a splash of desired milk 4. Add your favourite toppings and enjoy

I do not specialise in creating any form of recipes for any special diets but there's one particular thing that i can never be successful with. Vegan pancakes. As you can tell from my Instagram over the weekends, i experimented with ingredients to create vegan pancakes. They look okay on the outside but there wasn't much flavour to it and i can't figure what's missing. Perhaps banana? Thankfully dear Agata agreed on doing a guest post and she is going to share 2 well-liked recipes of hers. Her chickpea balls and vegan recipes :)

My name's Agata but you probably all know me as a crazy instagram food photographer - @doitforapancake... - yeah, the one who's always complaining about bad lighting, not enough food in the fridge or bad looking pancakes. Oh, and also the one who tells these not so funny jokes. And God knows what else. Sounds totally like me. BUT today I am not here to complain *uff, thanks Agata!*, I'm here because my lovely instagram friend - Jaslyn - asked me to write a guest blog post for her! Actually, she asked me to do this a long time ago but well, you know, my name's Agata... (ok, sorry, not complaining anymore!) Anyway, I want to tell you something about myself, my healthy instagram journey and my marvelous recipes (see? I'm so positive) - here we go!

Friends call me "Guta", on 26th of October I am turning 15, I was born in Poland - basic informations. My instagram journey began in January this year (actually I started caring about my instagram in April or May) but I've been really into this healthy lifestyle since October 2012. I was not even 13, I was a fat, silly, funny girl who loved junk food and fatty lunches/dinners. But I hated my body. And I needed to change that. So I went on a diet (not really healthy, I was eating too small) and I lost 20kgs in the course of 4 months. To be honest I don't want to talk about these times because I had no energy or joy to live my life. So my REAL health journey began in January this year :)

What else to say? Maybe things I love? I love travelling. Going abroad and seeing all these amazing places gives me power and happiness. I love cooking, watching movies under the blanket, reading (oops I am really into those books for teenagers haha. But also crime stories, horrors, fantasy books and even poetry), hanging out with my friends and cooking for them. I love pancakes and peanut butter (A LOT of pancakes and peanut butter). I love this instagram community. I had a chance to talk and chat with a lot of wonderful people here and actually I wish someday I will be able to meet them in real life! And there's one thing about me that I really hate. I hate the thing that I hate tomatoes. They are so pretty and this red tomato colour is the one missing on my pictures haha!

Anyway, I prepared for you two amazing recipes, I hope you'll love them too!

= CHICKPEA BALLS =

Ingredients: 1 can chickpeas (400g), drained 2tsp barley grass superfood (it's not a popular thing so you can miss this one or add powdered paprika instead) basil, oregano, pepper, salt or any spices you'd like to use Optional: a few tabasco drops

Directions: Preheat your oven to 180 degress Celsius Blend all ingredients in a food processor or by a hand blender until you get a thick, sticky mass Split the mass into several (I make 6) small parts and roll each one into a ball Bake for 25 minutes Enjoy!

*Here are my barley grass chickpea balls with avo, baked potato wedges and a carrot. Delicious! :)*

= THE BEST VEGAN PANCAKES OF MINE =

Dry ingredients: 45g buckwheat flour +10 g coconut flour (you can take 55g buckwheat) 1tbsp coconut sugar 1/3tsp baking soda 1/3tsp baking powder Optional: cacao for chocolate flavour/maca powder/ carob powder/cinnamon

Wet ingredients: 1/2 cup plant-based milk 1 chia egg (1tbsp chia seeds + 3tbsp water left in the fridge to thicken)

Directions: Mix dry and wet ingredients in separate bowl Now form "a hole" in the middle of dry ingredients, then pour wet ingredients into Slowly stir until most of the batter is incorporated but don't overmix! It's okay if the batter has a few lumps Warm the pan over medium heat with a small amount of coconut oil When it's really hot, start making your pancakes Use 1/4 cup measurement or 1 heaping tbsp of batter for one pancake Wait 2 minutes until bubbles appear on your pancake, then flip and cook for another minute or two Repeat with next pancakes, stack them up and top with everything you want Enjoy!

Dairy Free Overnight Oats

“Breakfast is the most important meal of the day” - I’m sure all of you are familiar with this sentence. Being a “breakfast person”, i always need to have my breakfast before i leave the house. Be it 2 slices of bread or a bowl of oats, as long as there’s something going in, my body is satisfied. This is what keeps me going. Without breakfast, i get very tired easily and i hate feeling so sluggish. As students or working adults, we have all slept through our alarms. Sometimes you’ll even feel that toasting those slices of bread right even of you is impossible. Once you jump out of bed, you are out of the door within 15 minutes flat. This is when overnight oats are your life saviours!

I always prep my overnight oats on sunday night. Usually i’ll prep for Monday to Wednesday and make ‘fresh jars’ on Wednesday night for Thursday and Fridays. In my new video, i showed you 3 different dairy-free overnight oats recipe that i enjoy. For the longest time i’ve been trying to find alternatives in replacement of greek yogurt (i can’t take dairy) for my overnight jars. “Use nut milk then” is what most of you would say to me right? But nut milk here in Singapore is crazily priced. I found that all i need is trust O’ coconut water and i get the most delicious tasting overnight oats.

Follow what i do in my video and when you’re ready to eat it in the morning, simply stir and mix everything together. You’ll find that the chia seeds has absorbed most of the water and it becomes a jelly-like texture. The honey gives your oats a sweeter taste. For those of you dislike the bland taste of oats, sweeten it up with honey. It makes a lot of difference. My dad loves putting honey into his oats as well.

Of course you can add whatever fruit toppings you desire. As long as you have the base ingredients - oats, chia seeds, honey and coconut water! Tip: Chia seeds are cheaper from iherb so i recommended my lovely Singaporeans to get yours from there instead of the local supermarkets. It’s usually $15 for 454g. In Fairprice or cold storage, it’s double nearly triple the price… i know right… Do use my discount code (at the left side of this page, under my blogger profile) if you were to purchase anything from iherb!

Guest Post: Lama Amine (Fruitmagnet) & Tomato Stew Recipe

In some of my blog posts, i always said that i'm thankful for being able to "meet" a few lovely girls from Instagram and i was so glad that some of whom i've approached agreed to do a little write-up to tell you, my lovely readers more about themselves and also share with you their amazing recipes. These girls are beyond talented and they are also drop-dead gorgeous (not kidding, just look at their profiles) and i really hope one day i'll be able to meet them in real life... Perhaps it's time to rob a bank (kidding... or not?)

So today, i'll introduce to you guys the lovely Lama Amine, also known as Fruitmagnet on Instagram. Check out her feed here. You would not believe that this sweet little pea is only 15 years old! Talk about determination and inspiring.

Hello everyone! My names Lama Amine. I live in middle east/Lebanon so i'm arabic. Two years ago i spent my time sitting around overeating on only junk food nothing else and i was always sick, feeling bad inside out! I used to treat my body like trash and one day i decided that was going to change and thats when my lifestyle changed.

After i started eating healthier i stumbled across a few foodie accounts and i loved the idea and thought why not start my posting my own pictures as well. You may ask who/what are my inspirations to healthy living... Instagram foodie accounts definitely motivate and inspire me! But honestly most of the time i am my own motivation. Everyone has their own favourite go-to meals and for breakfast, mine is definitely overnight oats. For lunch it would be rice paper rolls (contain quinoa and any veggies) and for dinner i have a super salad (throw any veggie in sight in a bowl with ajvar)

Here's a little tip to those of you who wish to start eating clean/maintaining a healthy diet - Set specific fitness goals! (This helped me a lot) Also do a kitchen clean up! It will be hard at first but nothing is easy.

And of course, a gust post would not be complete without a recipe. Here's Lama's recipe for her Tomato Stew! Doesn't it look so delectable?

Tomato Stew Makes 1 serving

Ingredients: 2 tomatoes 1 tsp pizza spice 1/4 diced onion 1/2c peas broccoli 1 diced sweet potato 1/2c chick pea

Directions: Cut the top of the of the tomato and cross the bottom in an 'x' symbol Place the tomatoes in a pot and bring to a boil Meanwhile chop your veggies or tidy your kitchen up a bit When the tomatoes are done peal them and place them in a food processor (with 1/2c of extra water) After that place everything in a pan on low/med heat until the the water/tomato sauce is mostly gone and serve

Raw Vegan Carrot Cake

Looking through my recipe index I realize I have way too many recipes containing bananas... no bake chocolate banana cake, banana muffins, banana pancakes, banana crepes?? I guess that proves to you my love for bananas. To switch things up a bit, here's a vegan recipe for all my vegan readers out there. I decided to bake a raw dessert a few days ago and decided on carrot cake. I did my research and realise that most recipes contain roughly the same ingredients.

To name a few - Carrots (duh), nuts, nutmeg, cinnamon, dates and coconut. I thought this would be a really easy recipe to recreate and so i did!

I even went to search everywhere for a springform pan (ah typical jas) and I was rather bumped out when i found out that the supermarket near my house does not stock any springform pans (WHAT).

And as usual, mothers do what they do - save the day!!!

The supermarket she went to however, only stocks a medium size springform pan meaning my pan was about 11inch? But that's okay because i could get started on my raw vegan carrot cake!!!

Therefore, don't worry if your layers are thicker than mine. That's because my pan is a big one. And again, silly me. I could have skipped the layering but obviously i didn't...

My whole family loved the cake (even my grandma) and since my grandma loves coconut, i was thinking of baking a coconut cake for her. Both my mum and my grandma don't take dairy and they always so happen to be my guinea pigs when i create a new recipe. hehehe

Raw Vegan Carrot Cake

Ingredients - Cake: 1 1/2 cup oats 1/2 cup shredded coconut 2 cups pitted Medjool dates 3 large carrots (peeled and chopped) 1/3 cup pumpkin seeds 1 tsp cinnamon 1/2 tsp nutmeg

Ingredients- Cashew Cream Frosting 2 cups cashews (soaked) 2 tbs lemon juice 2 tbs coconut oil (melted) 1/3 cup agave/honey/maple syrup 2/3 cup water

Directions - Cake: Combine all ingredients in a blender till they clump together If your blender is small, half the ingredients and repeat the step twice (that way your blender will not overwork)

Directions - Cashew Cream: Blend all ingredients in a blender until you get a smooth texture You might need to add more water to achieve a desired consistency

Now to make the layers! Take your springfoam pan and press in half of the cake mixture Place half of the cashew cream frosting on top Set it in the freezer for 30 minutes Repeat steps 1 & 2 again Set the whole cake in the fridge overnight
